Vegan Avocado Mousse

Vanilla Avocado Mousse

Makes: 4, 4-ounce servings
Ingredients
- 2 large avocados
- ¼ cup coconut nectar
- ¼ cup lime juice
- ¼ cup coconut water
- ¼ cup coconut butter, melted
- ¼ cup coconut oil, melted
- ½ vanilla bean, scraped
- 5 to 7 drops stevia
Instructions
- Combine all ingredients in a food processor and blend until smooth. Pour evenly into desired glasses. Chill in refrigerator until set.Top with granola, vanilla cashew cream and berries.
