National Macadamia Day Just Passed – What Did You Make?

We made Pineapple Coconut Muffins with Macadamias seen above in honor of this vastly underrated nut. Apparently our fellow bloggers feel the same way. Love. Them.

Macadamia nuts are a serious problem for me. Don’t believe me? A professor of mine once brought chocolate-covered macadamia nuts to share with the class after a trip to Hawaii and I sustained an impressive bruise to my thigh when I dove across the table to snatch one out of the container. Not one of my finest moments, but what can I say? I’m nuts for the little morsels.

I do regret, however, that I almost never get to use macadamia nuts when I bake. With so many friends with food allergies, it’s better to be safe than sorry. And if you are allergic to macadamia nuts, I am truly, deeply sorry that you don’t get to enjoy them. They are truly magnificent. So the next time I get to bake for an audience who can indulge in their crunchy, buttery texture, maybe I’ll give one of these recipes a try.
