To vigorously mix ingredients together (often in a circular motion), such as mixing egg whites with a balloon whisk or a batter with a wooden spoon. Beating combines ingredients, smooths out mixtures and, in the case of egg whites or cream and a whisk, can incorporate air.
Read recipe directions carefully. If a recipe says to beat, that is very different than to fold or combine gently. Make sure you understand the actual actions called for so that your recipe turns out as intended.
