A classic pie featuring a creamy filling and bananas, with recipes varying on the type of crust and filling. Some banana cream pie recipes suggest a graham cracker crust, while others use a classic pie crust – either option is baked blind. The filling is usually some sort of pastry cream or pudding, typically with vanilla extract added. It is prepared stovetop, cooled slightly and scraped into the crust to set up. The bananas can be sliced and placed beneath, on top and/or nestled in the middle of the filling. The whole is often covered with billows of lightly sweetened whipped cream. Some renditions using purchased crusts and pudding mix have given this pie a bad name. Give a homemade version a try.
