A bamboo skewer is our preferred tool for testing cakes. If you go to the store and look for a “cake tester,” you will most likely find a thin metal item that looks more like a length of wire connected to some sort of handle. We like wooden bamboo skewers because they allow the crumbs to cling better, giving you a better assessment of doneness. They are also cheap and multi-purpose. You could use wooden toothpicks, but they are short and not as easy to grasp.
