alkalized cocoa powder [al-kuh-lahyz d] noun
Also known as Dutch-process(ed) cocoa powder. Alkalized cocoa powder has been treated with an alkali to reduce its natural acidity. It is typically darker in color than natural cocoas, which have not been treated.

Alkalized cocoa is not interchangeable with natural cocoa in baking recipes. In savory recipes, however, it might be possible to swap one cocoa for another, such as in mole.
